12 oz. halibut steaks cut 1/2 inch thick
1-1/2 tbsp. fresh lime juice
1 tbsp. flour
1/2 tsp. salt
1/8 tsp. ground black pepper
1 tbsp. butter
1 cup heavy cream or half and half
3 tbsp. water
1/4 cup chopped macadamia nuts
Lime slices and parsley
Sprinkle both sides of fish with lime juice and let stand for 10 minutes. Combine flour, 1/4 tsp. salt and black pepper. Dip halibut in flour mixture; shake off excess. Melt butter and add fish. Cook until fish flakes easily, turning once. Remove to a warm serving platter and set aside.
Add cream, water, macadamia nuts and remaining 1/4 tsp. salt to pan. Cook and stir over low heat, scraping bottom of pan, until sauce is lightly browned and thickened. Spoon over fish. Garnish with lime and parsley. serves two.
